Chicken Chow Mein (SO SIMPLE)
Chicken chow mein is most likely one of your favorite Chinese takeout options. This one-pan dinner is incredibly satisfying with chicken, vegetables, classic chow mein noodles, and the best homemade chow mein sauce. It's also far healthier than ordering takeout.
Ingredients:
For the Chicken:
- · 1 pound boneless and skinless chicken thighs, thinly sliced
- · 1 teaspoon of soy sauce
- · 1 tsp cornstarch
- · 1/2 teaspoon ground white pepper
- · 1 tbsp. vegetable oil
To prepare the vegetables:
- · 1 large julienned carrot
- · 1 julienned red bell pepper
- · 1 julienned green bell pepper
- · 1 cup florets broccoli
- · 1/2 cup green onions, sliced
To make the sauce:
- · 1 tablespoon soy sauce
- · 1 tablespoon oyster sauce
- · 2 tbsp Shaoxing wine (dried sherry)
- · 1 tbsp. dark brown sugar
- · 1 teaspoon cornstarch
- · 1 cup of chicken broth
- · 1 tbsp sesame oil
Noodles:
- · 8 oz. chow mein noodles, cooked according to package directions
Optional Garnishes:
- · cilantro, finely chopped
- · scallions, sliced
- · toasted sesame seeds
Instructions:
- · Marinate the chicken: In a mixing bowl, combine the sliced chicken, soy sauce, cornstarch, and white pepper. Allow at least 15 minutes to marinate.
- · Make the Vegetables: Carrots and bell peppers should be washed and julienned. Make bite-sized pieces of the broccoli florets. Cut the green onions into slices.
- · To make the sauce: whisk together soy sauce, oyster sauce, Shaoxing wine, brown sugar, cornstarch, and chicken broth in a small bowl until smooth.
- · Cook the chicken: In a large wok or skillet over medium-high heat, heat the vegetable oil. Cook, stirring frequently, until the marinated chicken is golden brown and cooked through. Set aside after removing from the wok.
- · Sauté the Vegetables: In the wok, combine the carrots, bell peppers, and broccoli florets. Stir-fry for 2-3 minutes, or until the vegetables have softened.
- · Add the Sauce and Noodles: Pour in the sauce and noodles and bring to a simmer. Return the noodles and chicken to the wok. Toss everything together and heat through.
- · Garnish and Serve: Garnish with chopped cilantro, sliced scallions, and sesame seeds to serve. Immediately serve.
Tips:
- · For a vegetarian option, substitute other proteins such as shrimp, tofu, or vegetables for the chicken.
- · If you don't have oyster sauce, use more soy sauce or a splash of fish sauce instead.
- · Top the dish with a fried egg to add even more flavor.
- · Use dark soy sauce instead of regular soy sauce for a richer flavor.
- · To save time, you can also use pre-cooked chicken.
- · You can use chicken breasts instead of thighs, but they will dry out more quickly.
- · Feel free to adjust the amount of vegetables and sauce to your liking.
- · For a more filling meal, serve your Chicken Chow Mein with steamed rice.
