Ingredients:

·       500g boneless chicken, cut into bite-sized pieces

·       1 cup thick yogurt

·       2 tablespoons ginger-garlic paste

·       1 tablespoon red chili powder

·       1 tablespoon turmeric powder

·       1 tablespoon cumin powder

·       1 tablespoon coriander powder

·       1 tablespoon garam masala

·       Salt, to taste

·       2 tablespoons vegetable oil

·       Juice of 1 lemon

·       Fresh coriander leaves for garnish

For the Tikka Sauce:

·       2 tablespoons butter

·       1 medium onion, finely chopped

·       2 cloves garlic, minced

·       1 tablespoon grated ginger

·       1 teaspoon garam masala

·       1 teaspoon ground cumin

·       1 teaspoon turmeric powder

·       1/2 teaspoon Kashmiri chili powder or paprika

·       1 (14-ounce) can diced tomatoes

·       1 cup heavy cream

·       1/4 cup chopped cilantro

·       Salt and pepper to taste

Marination:

 1. Combine the yogurt, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, salt, and vegetable oil in a large mixing bowl.

2. Thoroughly combine the ingredients to make a smooth and well-combined marinade.

3. Add the chicken pieces to the marinade, making sure each piece is evenly coated. Refrigerate the bowl for at least 2 hours, preferably overnight, to allow the flavors to infuse.

Cooking:

1.    Preheat your oven to 200°C (392°F).

2.    Thread the marinated chicken pieces onto skewers and place them on a baking tray lined with parchment paper.

3.    Bake the chicken in the preheated oven for 20-25 minutes or until the edges are slightly charred, and the chicken is cooked. You can also use a grill for that authentic smoky flavor.

4.    Occasionally baste the chicken with the remaining marinade or a little oil during cooking for added moisture and flavor.

5.    Once cooked, squeeze fresh lemon juice over the Chicken Tikka for a burst of citrusy freshness.

6.    Garnish with chopped fresh coriander leaves.

Additional Tips:

·       For a more authentic flavor, use tandoori chicken masala for the marinade.

·       Adjust the spice level of the marinade and sauce to your liking.

·       Garnish with chopped red onion and a squeeze of lime for extra flavor.

Serving:

Serve the Chicken Tikka with naan or steamed rice. For a complete and satisfying meal, serve with mint chutney and sliced onions.
