CHINEES FRIED RICE

• 34 cups finely diced onion

• 2 c. bean sprouts

• 2 tbsp light soy sauce (add more if desired)

 

HOW TO PREPARE:

1.    Heat 1 tbsp oil in a wok; add chopped onions and stir-fry for 8-10 minutes, or until onions turn a nice brown color; remove from wok.

2.    Let the wok cool slightly.

3.    Combine 3 drops of soy and 3 drops of sesame oil in an egg; set aside.

4.    Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; swirl quickly until egg sets against wok; when egg puffs, flip and cook another side briefly; remove from wok, and chop into small pieces.

5.    Heat 1 tablespoon oil in a wok; add selected meat, carrots, peas, and cooked onion to the wok; stir-fry for 2 minutes.

6.    Toss in the rice, green onions, and bean sprouts, and stir-fry for 3 minutes.

7.    Fold in 2 tbsp light soy sauce and the chopped egg to the rice mixture; stir-fry for 1 minute more; serve.

8.    If desired, place additional soy sauce on the table.

       Use cold, cooked rice: Cold rice separates more easily and evenly. If you don't have cold rice, spread the cooked rice out on a baking sheet and set it aside to cool completely before using.
