  • 8 oz (approximately 225g) pasta (your choice of shape)
  • 1 pound (450g) chicken breasts, boneless and skinless, diced
  • 2 tbsp of olive oil
  • 3 minced garlic cloves
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • Season with salt and pepper to taste.
  • 1 cup (240ml) halved cherry tomatoes
  • 1 cup tomato sauce (240ml)
  • 1 cup (240ml) mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese (120ml)
  • Optional garnish: fresh basil

INSTRUCTIONS TO PREPARE :
  • Prepare the pasta according to the package directions. Set aside after draining.
  • Heat the olive oil in a large skillet over medium-high heat. Combine the diced chicken, minced garlic, oregano, basil, salt, and pepper in a mixing bowl. Cook until the chicken is browned and thoroughly cooked.
  • Cook for an additional 2-3 minutes, or until the cherry tomatoes begin to soften in the skillet.
  • Pour in the tomato sauce and mix well. Allow it to simmer for a few minutes, or until the sauce is thoroughly heated.
  • Toss the cooked pasta in the skillet with the sauce until well coated.
  • Top with the shredded mozzarella and grated Parmesan. Cover the skillet and set aside for a few minutes, or until the cheese is melted and bubbly.
  • If desired, garnish with fresh basil.
